Dual motor, no question, for daily use: it rises faster, holds more weight and is more stable at standing height. A single motor is slower with less capacity. Avoid the crank: adjusting the height is so inconvenient you'll stop doing it.
For a dual-monitor setup, look for at least 140-160 cm wide and 70 cm deep (to push the screen to the right distance). Also check the height range: if you're very tall or short, confirm the desk lowers and rises enough.
